Dry white wine

Univers is the entrance to our “Universe”: fresh, saline and elegant; pure palomino grape. Its grapes come from the Miraflores Baja plot, with coarse albariza soils and red « lustrillos » soils. Its salinity and purity stand out, due to the fermentation in the old solid steel champagne tanks. The vineyard highlights the salinity of the plot with subtle hydrocarbons and gunpowder, aromas associated with the large albariza plots.

Biodynamic since 2022

Average yield:

5000-8000 kg/hectare

Vinification:

Pressing of whole grapes. Gravity rank-out. Spontaneous fermentation and vinification carried out in enamelled solid steel tanks for 11 months with all its lees. It is bottled in July without filtering.

4000-6000 bottles/year

Sulfites:

5-15mg/l of free sulfur
