Dry white wine

Étoile is our star; dry, hectic, salty and elegant; a silent memory of our History. Its grapes come from “Pastrana Baja”, a vineyard of more than sixty years that we were able to lease for the first two years, located in the lower part of the East orientation of the “Pago Miraflores”. It highlights its memory notes of sherry wines in a wine without intervention and without flower veil.

100% old “palomino”. Vineyards of 50 years.


“Viña Pastrana Baja”,” Pago Miraflores”. 0.7 hectares. “Lustrillos albariza” soils.


Biodynamic and ecological. Superficial work of green floors and covers.

Average yield:

5000-8000 kg/hectare


Fermented and vinified in old Chamomile and “Amontillado” boots for 9-10 months. Spontaneous fermentation; without rectification of any kind. Initial sulphite minimum. Work on lees. Without filtering or cold stabilizing.

Bottle production:

2016: 520 bottles
2017: 1,400 bottles


<8mg/litre of sulphites.
