The quota offered to Club members in December 2020 was the 2018 vintage: Lumière 2018, Elixir 2018 and Univers 2018. With 15 months in the bottle, they were at an ideal time to enjoy them.
2018 was a cooler vintage than 2017, defined by abundant rainfall and a summer with westerly winds that allowed a mild ripening in July and August, and a late harvest in late August.
We perceive in 2018 more clearly the work in the vineyard with biodynamic agriculture and the promotion of living soils, which have fostered greater precision, liveliness and elegance in the wines.
In the winery we continue with our philosophy of low intervention: spontaneous fermentation, without any type of rectification and with minimal added sulfur. The only novelty has been a rinse with bentonite in a minimum proportion to reduce the presence of deposits in the bottle. All wines are made without filtration to maintain their essence.
Our wines are made exclusively with grapes from our plots that we grow ourselves. The composition of the wines remains the same:
100% Fine Palomino from old La Platera vines (Pago Miraflores) fermented and vinified in French oak barrels.
80% Fine Palomino from old La Platera vines (Pago Miraflores) and 20% Moscatel de Chipiona from old El Camino vines (Pago Abulagar), fermented and vinified in French oak barrels.
100% Palomino california from young vines from La Platera (Pago Miraflores) fermented and vinified in solid steel tanks.
