Since 2026, David L\u00e9clapart has handed over the reins to Alberto and Eduardo Garc\u00eda, who, together with Alejandro, work hard every day, confident that<strong> fully committed to working the vineyard with respect<\/strong>. Their partnership is based on a shared passion for biodynamic viticulture, the promotion of living soils, and the significance of agriculture and wine.<\/p>\n\n\n\n<p>The key is to look for&nbsp;<strong>the best raw material<\/strong>&nbsp;(with the selection of its plots of albariza and old palomino land),&nbsp;<strong>find its most delicate expression<\/strong>&nbsp;(with its biodynamic viticulture) and&nbsp;<strong>to preserve that value<\/strong>&nbsp;in the winery (with minimum intervention techniques).<\/p>\n\n\n\n<p>They have succeeded in creating a great white wine,&nbsp;<strong>without flowering veil and without fortifying<\/strong>, based on respect and care for the soul of Jerez: the land of Albariza and the Palomino grape.<\/p>\n\n\n\n<p>Located in the best lands of&nbsp;<strong>vineyards of Sanl\u00facar de Barrameda, in the historic Pago Miraflores<\/strong>, taking advantage of the cool climate of the Atlantic Ocean, they have restored five hectares of vineyards, mostly comprising old vines of traditional mass-selected varieties of Palomino Fino and Moscatel de Chipiona.<\/p>\n\n\n\n<p>To make the wines they use techniques&nbsp;<strong>minimum intervention: they add the minimum sulphur content<\/strong>&nbsp;(only 10% of the usual), they do not use selected yeasts or acids to rectify the acidity, they keep the lees and bottle without filtering. Overcoming the risks, with a delicate and careful work, the result they achieve is sublime:&nbsp;<strong>a dry, saline and mineral white wine<\/strong>, with subtle aromas, long on the palate, and
